I had the chance to chat with one of my nearest and dearest friends, Miranda Nelson, about her life as a Christian Vegan. Miranda is such a well of knowledge when it comes to scripture. She and her husband Jerame travel the world and share God’s love with others full time through their ministry, Living At His Feet. She also lives a fasted lifestyle, much like Daniel in the book of Daniel, by choosing a plant based diet and a life of consecration. I really connect with Miranda because this is the type of lifestyle I am also called to live. God has made that clear.
Miranda was the first Christian Vegan that I ever encountered, at least that I’ve been aware of. Over the years I’ve know a handful of Vegetarians who share my faith, but I’d never met a Vegan until Miranda. Since I’ve started this series of videos I have met several Christian Vegans through social media, and it’s been a wonderful experience getting to build community with like minds and hearts. One thing I love about Miranda’s particular way of eating is that she eats a very balanced plant based diet, not just fruit. Fruit is my go-to because all of my teeth are sweet, but in order to eat this way long term I think it’s important to find a balance.

Miranda’s Raw Energy Balls
In a high powered blender or food processor, blend:
2 (heaping) tbsp shredded and unsweetened coconut
1 tbsp chia seeds
1/3 cup quinoa flakes OR quick oats
1/4 cup uncooked quinoa
3 tbsp cacao
1 tbsp almond butter
1 tbsp coconut oil
1 cup fresh medjool dates pitted
Roll in small balls and then roll in coconut (or your choice of topping… Option for chia seeds or goji berries or hemp seeds)
Refrigerate and enjoy!
Makes approximately 12
Frozen blackberries, cherries, cranberries, and unsweetened açai
Shredded unsweetened coconut
Raw ground cacao
Blend and enjoy!
