I recently sat down to chat with Lindsey over Skype about her experience as a Christian who follows a plant based diet. Though she just made the transition, she’s already felt many health and spiritual benefits. I first met Lindsey through Instagram and was encouraged by her posts and friendliness towards others. As you can see in the video above, our first chat felt more like old friends catching up. I love how social media can bring us together with like minds and hearts, don’t you?
I saw this yummy food post on Lindsey’s Instagram account and had to ask her about it. Here’s how she made it!
“I had 2 frozen bananas and 2 tbsp unsweetened cocoa to make “nice cream”. I made the nice cream (but decided it was too cold outside and wanted something warm). So in a bowl, I mixed my chocolate nice cream mixture and a heaping 1/2 cup of dry ground oats. I mixed it well and put the mixture on a pan and simply made my own little square brownie shape foil to bake my brownie and to help it bake in an even shape. For the PB2 heart I took a serving of PB2 and mixed it with water and put on top (made it into a heart shape). I then baked the brownie on 350 for 25-30 minutes. Let cool for 20 mins. I added a few vegan chocolate chips when it cooled off by pressing them into the brownie.”
If you aren’t familiar with “nice cream”, it’s a simp vegan version of ice cream that is free of dairy. So if you are lactose intolerant, this is a great option for you as well. The base for nice cream is frozen bananas, and you can add whatever you want to it if you want to experiment with flavors. I love to add cacao nibs or maca powder when I am eating it alone as a traditional ice cream alternative.
